Cooking: "Oven-Fried" Orange Flounder

Here's another of my "kitchen alchemy" experiments.  It tastes pretty good, actually.  And this is the first time I've fixed flounder that didn't come out of a box.


To make this simple recipe, you don't need much:
1 frozen flounder fillet
Salt and pepper
Olive oil
Panko
Orange juice

Preheat your oven to 350 degrees Fahrenheit.

While the oven is heating up, brush olive oil on all sides of the flounder.

Top with salt and pepper, to taste.

Add panko to top of fillet.

Bake the fish until you can smell it.  Now it's time to splash orange juice on it.  Return to oven until the thickest part of the fillet flakes.
